I love to make this pumpkin juice sparkling with the addition of ginger beer. Depending on the brand you choose it can bring a little extra spice to the drink. You can leave it out for a more traditional Harry Potter-inspired Pumpkin Juice if desired. If I am making it for a party I also like to spike it with a shot of cinnamon whiskey to make it more adult 🙂 Happy Pumpkining!
Ingredients
- ½ cup Apple Cider
- ½ cup White Cran/Peach Juice
- 1 tablespoon Pumpkin Puree, not pie mix
- ¼ teaspoon Pumpkin Pie Spice
- ½ teaspoon Vanilla Extract
- Ginger Beer/Pumpkin Spice Ginger Beer
- Cinnamon Whiskey, optional
Instructions
- Fill 4 cocktail glasses to the top with ice.
- In a cocktail shaker, combine the cider, juice, pumpkin, pie spice, and vanilla with a handful of ice. Shake for about 10 seconds to combine. Pour the mixture into the ice-filled glasses filling about â…” full. If you making it adult, add 1 oz of cinnamon whisky at this time, then top the glass with the ginger beer, give a stir to bring it all together, and enjoy.
Notes
If you want to keep it alcohol-free, eliminate the whisky, and just fill the glass with the ginger beer.
Makes 4 drinks.
To make a pitcher of Pumpkin Juice, or to fill a punch bowl or drink dispenser, combine 1, 64oz bottle of the apple cider, white/cran juice, 1 can of pumpkin puree, and 24 ounces of ginger beer all together in the container. Whisk it all together with 2 tablespoons of pie spice, and 3 tablespoons of vanilla extract. You can then make each drink adult as desired with 1 shot of cinnamon whiskey.
