  • ½ cup Pineapple Juice
  • 3 tablespoons Soy Sauce

  • 2 tablespoons Lime Juice, fresh
  • 2 teaspoons Sriracha
  • 1 teaspoon Roasted Garlic Powder
  • ¾ teaspoon Ground Ginger

  • Grill the skewers over hot coals or on a medium heat grill until the chicken reaches an internal temperature of 165˚F.
  • To make the sauce, combine the reserved marinade, coconut milk, and peanut butter into a 2qt saucepan, whisking until the mixture reaches a simmer. Simmer the sauce, stirring ofter over medium-low heat for 8-10 minutes until slightly thickened.
  • Top the grilled skewers with the peanut sauce, chopped peanuts, and green onions. Squeeze lime juice over the top if using and serve over/with Pineapple Coconut Rice.
