  • ½ cup Olive Oil, extra virgin
  • ¼ – ½ teaspoon Crushed Red Pepper Flakes (adjust to taste)
  • Kosher Salt, to taste
  • Fresh Cracked Black Pepper, to taste
  • 2 cups reserved pasta water (optional)

Instructions

  • Preheat oven to 400ËšF (200ËšC).
  • Add cherry tomatoes, fresh thyme bundle, whole garlic cloves, feta cheese (block in the center), and seasoned chicken breasts to a large baking dish. Drizzle generously with 1/2 cup olive oil over everything. Season with kosher salt and fresh cracked black pepper, then gently toss tomatoes and chicken to coat.
  • Bake for 30 to 35 minutes, or until the chicken breast reaches an internal temperature of 165ËšF (74ËšC), tomatoes are softened and bursting, and feta is melty.
  • While the dish bakes, cook your chosen pasta according to package directions until al dente. Before draining, reserve about 2 cups of the starchy pasta water. Strain the pasta and set it aside.
  • After the initial baking time, check the chicken’s temperature. If done or nearly done, increase oven heat to 450ËšF (230ËšC) and bake for another 5-10 minutes, or until the feta and tomatoes achieve a desired browned and caramelized finish. For extra browning, you can use a high broiler for 3-5 minutes, watching closely.
  • Remove the baking dish from the oven. Carefully remove the cooked chicken, thyme bundle, and roasted garlic cloves.
  • Add the cooked pasta and crushed red pepper flakes to the pan. Vigorously stir and mash the baked feta and tomatoes with a spoon or fork until they form a creamy, cohesive sauce that coats the pasta.
