The timeless combination of chocolate and peanut butter is, for me, a culinary revelation. I often joke that I should own stock in Reese’s because their candies are genuinely the only ones I crave. And to be even more specific, my heart belongs to their holiday shapes – you know, the ones that boast a generous ratio of peanut butter to chocolate. I tell myself they’re practically a health food, more protein than sugar, right? Whatever the justification, that delightful blend of sweet and salty, smooth and slightly crumbly, is pure bliss. This cake brings that same iconic flavor profile to life in a sophisticated, show-stopping dessert that’s perfect for any occasion.

The Essential Ingredients for Your Decadent Chocolate Peanut Cake

Crafting this simple yet profoundly satisfying chocolate cake requires a handful of key ingredients that, when combined, create an explosion of flavor and an incredibly moist, rich texture. It’s a cake that’s just sweet enough, delivering an exquisite indulgence that will have everyone asking for seconds. The beauty lies in the quality of your components, especially the chocolate itself, and the meticulous care in preparation.

When it comes to the star of the show – the chocolate – I highly recommend opting for a high-quality bar of dark chocolate. While you’ll be adding butter and sugar to the cake batter, a darker chocolate (even bittersweet) provides a crucial depth of flavor that offsets the sweetness beautifully. This balance ensures the cake is rich and decadent without being cloyingly sweet. My personal go-to is often a dark or bittersweet pound-plus bar from Trader Joe’s, which offers exceptional quality and value for baking. The higher cacao content not only lends a more intense chocolate flavor but also contributes to the cake’s beautifully dark hue and complex aroma. Remember, a good chocolate foundation makes all the difference in achieving that deeply satisfying chocolate experience.

Beyond the chocolate, ensure your butter and eggs are at room temperature. This seemingly small detail is vital for creating a smooth, emulsified batter. Room temperature ingredients blend together more evenly, resulting in a lighter, more uniform cake crumb. Granulated and brown sugar provide different notes of sweetness and moisture, with brown sugar adding a subtle molasses richness. All-purpose flour gives the cake its structure, while baking soda acts as a leavening agent, creating a tender crumb. A touch of kosher salt enhances all the flavors, balancing the sweetness and chocolate notes. Finally, vanilla extract is indispensable for rounding out the overall flavor profile, adding warmth and aromatic depth.

Building the Perfect Chocolate Cake Foundation

My preferred vessel for baking this magnificent dessert is a 9×13 inch pan. This choice isn’t arbitrary; I find it provides the ideal cake-to-frosting ratio, ensuring every bite is a harmonious blend of moist cake and luscious frosting. Furthermore, a rectangular cake is incredibly practical for serving a crowd, making it a fantastic option for parties, family gatherings, or simply having plenty of deliciousness to enjoy throughout the week. The preparation of the pan is a simple yet crucial step to ensure your cake bakes evenly and releases effortlessly.

To begin, thoroughly coat your 9×13 inch baking pan with a non-stick spray. Then, line the bottom with parchment paper, allowing it to overlap the sides slightly. This overlapping parchment creates “handles” that make lifting the cooled cake from the pan incredibly easy, minimizing any risk of breakage. Once your pan is prepped, pour the beautifully smooth chocolate batter inside. Take a moment to gently smooth the batter with an offset spatula or the back of a spoon, ensuring it is evenly dispersed across the pan. This step is important for uniform baking, preventing any thin spots that might overcook or thick spots that remain underdone.

Once your cake is out of the oven, exhibiting that delightful aroma and a beautiful rise, resist the urge to immediately flip it out. Allow the cake to cool in the pan for approximately 15-20 minutes. This initial cooling period allows the cake structure to firm up, making it less fragile and easier to handle. After this time, you can carefully turn it out onto a wire cooling rack if you prefer, or you can choose to serve the cake directly from the pan. The latter is often a convenient option, especially for casual gatherings. Regardless of your choice, ensure the cake is completely cool before you even *think* about adding that heavenly frosting. A warm cake will melt the frosting, turning your beautiful creation into a messy puddle. Patience is key here – about 2 hours, or even overnight, is ideal for a perfectly cool cake.

The Star of the Show: Heavenly Peanut Butter Frosting

While the chocolate cake itself is undeniably delicious, what truly elevates this dessert into the “Chocolate Covered Peanut Cake” masterpiece is its rich, creamy, and utterly irresistible peanut butter frosting. This isn’t just any frosting; it’s a dream come true for anyone who adores the sweet and salty symphony of peanut butter. The texture is designed to be stiff enough to hold its shape beautifully, yet silky smooth, melting delightfully in your mouth. Getting this frosting right is crucial for the overall experience of the cake.

The process of making this amazing frosting is straightforward but requires a stand mixer for the best results. You’ll begin by whipping creamy peanut butter and room-temperature unsalted butter together until they are perfectly combined and fluffy. This creaming action incorporates air, making the frosting light and airy. Next, gradually add powdered sugar, which provides the sweetness and structure, along with heavy cream, vanilla extract, and a pinch of kosher salt. Start the mixer on low speed to prevent a cloud of powdered sugar from enveloping your kitchen, then increase the speed to high. Beat the mixture for about a minute until the frosting becomes uniform, light, and wonderfully fluffy. Don’t forget to scrape down the sides of the bowl to ensure everything is incorporated, then beat for another 30 seconds to achieve peak fluffiness.

Always taste your frosting! This allows you to adjust the seasoning if needed. If you feel it needs a little more salt to cut through the sweetness, now’s the time. The beauty of this recipe is its adaptability: if the frosting seems too thick for your liking, you can add a touch more heavy cream, a tablespoon at a time, until it reaches your desired silky consistency. Conversely, if it’s too thin, a bit more powdered sugar will help thicken it. For a cake topping, you’re aiming for that “stiff yet silky” texture – easy to spread but substantial enough to hold those beautiful swirls.

When it is finally time to frost your completely cooled cake, scoop EVERY last bit of that amazing frosting out of the bowl and generously dollop it onto the top. To achieve those beautiful, inviting swirls that make this cake look as incredible as it tastes, simply use the back of a spoon to gently press and spread the frosting across the cake. The slight resistance of the frosting will naturally create lovely peaks and valleys, adding a rustic yet elegant touch to your dessert. Don’t strive for perfection; the natural swirls are part of its charm and homemade appeal.

The Grand Finale: Adorning Your Chocolate Covered Peanut Cake

Now, for the final flourish that truly transforms this into a Chocolate Covered Peanut Cake! This step is where the name comes to life and where you add the textural contrast and visual appeal that will captivate anyone who sees it. Generously sprinkle a handful each of salted peanuts and chocolate-covered peanuts across the top of the freshly frosted cake. The combination of these two types of peanuts is absolutely essential for the ultimate experience. The salted peanuts provide a delightful crunch and a savory counterpoint to the sweet frosting and rich cake, elevating the flavor profile with every bite. The chocolate-covered peanuts, on the other hand, add another layer of chocolate intensity, a different kind of crunch, and an extra touch of decadence. Their presence creates a playful yet sophisticated topping that makes this cake truly unique and unforgettable.

The visual impact of these toppings cannot be overstated. Slice into this masterpiece, and you’ll reveal layers of moist chocolate cake and luscious peanut butter frosting, crowned with that irresistible crunch. Serve it proudly on white plates, perhaps with a few extra peanuts scattered around the side for an elegant touch, and watch as your guests fall in love with every forkful.

  • 3 cups Powdered Sugar
  • ¾ cup Heavy cream
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Kosher Salt
  • Chocolate Covered Peanuts, for topping
  • Salted Virginia Peanuts, for topping

Instructions

for the cake:

  1. Preheat the oven to 325ËšF and coat a 9×13 cake pan with pan spray and line the bottom with parchment.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter until smooth. Add in the sugars and beat until well combined. Beat in the eggs one at a time until well combined. Mix in the melted chocolate and vanilla and blend to combine. Place the baking soda, salt, and one cup flour into the bowl and with the mixer on low-speed drizzle in half the water. Stop the mixer, add in the remaining flour, and again with the mixer on low-speed drizzle in the remaining water. Blend the mixture until well combined and no traces of flour remain, being careful not to over mix so the cake doesn’t become tough. Pour into the prepared pan and bake for 50-60 minutes, until a cake tester inserted in the middle comes out clean and the cake has begun pulling away from the sides of the pan.
  3. Cool the cake in the pan for about 15 minutes, then remove it to a cooling rack and allow it to cool completely, about 2 hours or overnight.

for the frosting:

  1. In the bowl of a stand mixer fitted with the paddle attachment, whip the peanut butter and butter together until well combined, about 2 minutes. Add the powdered sugar, cream, vanilla, and salt to the bowl and mix on low speed until the sugar is worked in. Turn the mixer up to high and beat for about 1 minute until the frosting is uniform and fluffy. Scrape down the bowl and beat for about 30 more seconds. Taste and adjust the salt if needed. To adjust the thickness of the frosting, add more powdered sugar to thicken, or more cream to thin to your desired texture, for the top of the cake you want a stiff yet silky texture.
  2. Spread ALL of the frostings on top of the cooled cake and use the back of a spoon to get even swirls.
  3. Top the cake with chocolate-covered peanuts, and salted peanuts just before serving.
