- 2 lb Baby Yukon Gold Potatoes (or other small, waxy potatoes)
- 2 teaspoon Olive Oil
- Kosher Salt and Fresh Cracked Black Pepper, to taste
- 4 oz White Cheddar Cheese, finely shredded
- 6 slices Bacon, cooked and crumbled
- 2 tablespoons Sour Cream
- 1 bunch Green Onions or Chives, minced
