Your remaining three fingers (middle, ring, and pinky) should then wrap comfortably around the handle, providing additional support and stability. - Forged Knives: These are the knives you want for a lasting investment. Forged knives are crafted from a single bar of steel, which is heated, then hammered, stretched, and shaped by skilled artisans or machines. This intricate process of “stretching and firing, beating and ice cooling” hardens the steel, creating a denser, stronger blade. Forged knives typically feature a full tang (the steel extends through the entire handle), providing superior balance and durability. They hold a sharp edge significantly longer, can be repeatedly sharpened for decades, and are built to withstand heavy use, truly lasting a couple of lifetimes with proper care.

The culinary world generally recognizes two primary schools of knife design: Japanese and German. Both produce exceptional knives, but they differ significantly in their characteristics and intended uses:

While they require a bit more care due to their harder, more brittle steel (making them more susceptible to chipping if abused), their precision and cutting ability are unmatched. If you have to choose just one, I’d lean towards the Santoku.
