Its enduring popularity stems from its incredible flavor and surprising ease of preparation. The true secret to its irresistible taste lies in the garlicky, herbaceous homemade sofrito, which masterfully elevates the flavors, making this pigeon pea rice dish utterly unforgettable. It’s a hearty, flavorful, and comforting meal perfect for any occasion.
Ingredients
- 1 tablespoon Vegetable Oil
- ¼ Yellow Onion, diced
- 3 cups Basmati Rice (or medium-grain white rice)
- 3 cloves Garlic, sliced
- Water, about 3 cups (or a 1:1 ratio with rice)
- 2 packet Sazón (for color and flavor)
- ¼ cup Tomato Sauce
- ¼ cup Sofrito (fresh homemade is highly recommended)
- 8-10 Spanish Olives (with pimento, optional but traditional)
- 1 can of Gandules, Pigeon Peas, drained and rinsed

I prefer to cook mine in a pressure cooker for efficiency, or you can slow cook it for 6-8 hours until it’s incredibly fork-tender and falling apart. Once cooked, shred the pork roast. You can mix a portion of the shredded pork directly into the Arroz con Gandules while it’s simmering or after it has steamed, for an added layer of flavor and texture. Serve the remaining shredded pork on top of the finished rice. This combination creates a complete, amazingly delicious meal with surprisingly minimal effort, perfect for a family dinner or a festive gathering.
