It is ok to marinate in lemon for a long time or a short time, not medium time, haha! Always ensure an internal temperature of 165°F (74°C) is reached, and let the chicken rest for 5-10 minutes after cooking for optimal juiciness.
You can let it sit overnight for more authentic souvlaki style chicken, which will be incredibly tender and deeply flavored.
Substitutions
If you do not have Greek seasoning, just use more oregano (and consider adding a pinch of garlic powder and dried thyme). And vice versa, if you don’t have extra oregano use more Greek seasoning. You can also experiment with other Mediterranean herbs like marjoram or a touch of rosemary.
I use fresh lemon because I usually keep them in my fridge at all times, and the zest adds vital aromatic oils. If you do not have fresh lemon you can leave the zest out of the recipe and just use bottled lemon juice for some flavor, though the fresh zest truly elevates the dish.
