Their lunch buffet features a version of this dish that I always make a point to savor. The delicate balance of robust yet light flavors is what truly captivated me. In my home adaptation, I achieve this perfect richness and a lovely thickening consistency by incorporating coconut milk, which also conveniently makes the dish entirely dairy-free!

Saffron Chicken and Mushrooms

This Mediterranean-inspired Saffron Chicken and Mushrooms recipe is a truly captivating dish that will leave you craving more after just one taste! It’s a harmonious blend of creamy coconut, delicate saffron, tender chicken, and earthy mushrooms, creating a comforting yet sophisticated meal perfect for any occasion.

Ingredients

  • 2, 8oz pkg whole Crimini Mushrooms, quartered
  • Olive Oil
  • Kosher Salt
  • Fresh Cracked Black Pepper
  • 4, 6oz Chicken Breasts, sliced into strips
  • Greek Seasoning
  • 2, 13.5 oz cans Coconut Milk – Chaokah brand (full-fat for best creaminess)
  • 1 tablespoon Chicken Base
  • ½ gram Saffron threads – about 2 good pinches
  • 2 boxes Rice-a-Roni Rice Pilaf, cooked to package directions (use chicken stock instead of water for extra flavor)

Instructions

  1. Generously season your sliced chicken breast strips with a light sprinkle of salt, fresh cracked pepper, and Greek seasoning. Ensure the seasoning is evenly distributed for maximum flavor. Set aside to allow the flavors to meld while you prepare the mushrooms.
  2. In a large, heavy-bottomed stew pot or Dutch oven, heat a couple of turns of olive oil over medium-high heat. This should be about 2 tablespoons, enough to coat the bottom. Add your quartered mushrooms and sauté them, stirring occasionally, until they are deeply browned and have released most of their moisture. It will seem like a lot of mushrooms initially, but they will cook down significantly, reducing to about one-third of their starting volume. Once browned, lightly season them with a pinch of salt and pepper. Remove the browned mushrooms from the pan and set them aside.
  3. Return the pan to medium-high heat and add another light drizzle of olive oil, approximately 1 tablespoon. Add the seasoned chicken breast strips to the pan. Cook in batches if necessary to avoid overcrowding, ensuring the chicken browns beautifully on at least one side. Browning is key to developing rich flavor. Once all the chicken strips have been lightly browned, return all the chicken to the pot along with the previously cooked mushrooms. Stir in both cans of coconut milk and the chicken base.
  4. Season the stew with a few cracks of black pepper and 1 teaspoon of salt. Add your saffron threads and stir everything together thoroughly to combine. Bring the mixture to a gentle boil, then immediately reduce the heat to a low simmer. Allow the stew to simmer uncovered for approximately 20-30 minutes, or until the coconut milk has visibly reduced and thickened to your desired consistency. The saffron will fully infuse the sauce, giving it a beautiful golden hue.
  5. While your chicken stew is simmering, prepare the rice pilaf according to the package directions. For an extra layer of flavor, I highly recommend swapping out the water called for in the instructions with chicken stock. This simple substitution will make your pilaf even more delicious and complement the stew perfectly.
  6. Once the Saffron Chicken and Mushroom mixture has finished cooking and the sauce has thickened, taste the sauce. Adjust the seasonings as needed, adding more salt, pepper, or Greek seasoning to suit your preference. Serve hot over the prepared rice pilaf.

I find this dish truly shines when served with contrasting textures and flavors. I particularly enjoy accompanying it with a vibrant side of quick-pickled cucumber and red onion. These Rösle Silicone Tongs are an investment, but worth every penny. Their ergonomic design and soft silicone tips make them incredibly comfortable to hold and use for extended periods, reducing hand strain—a huge plus for someone who cooks as much as I do. I have four sets because they’re indispensable for flipping chicken, sautéing mushrooms, and serving delicate dishes without scratching my non-stick pans.

These Nordic Ware Sheet Pans are an absolute must-have. Every kitchen should have at least two sets. I personally own at least four of each size because they are incredibly versatile for roasting vegetables, baking cookies, and even as a base for cooling hot pots. Their durability and even heat distribution make them superior to flimsy alternatives.

This Fagor Pressure Cooker is my favorite, offering the same incredible speed and convenience as an “Instant Pot” but with a design that I find even easier to operate. If you don’t already own a pressure cooker, you absolutely NEED one; it will quickly become your best friend in the kitchen, drastically cutting down cooking times for stews, stocks, and even tough cuts of meat.

A sharp knife is, without a doubt, the single most important tool in any kitchen for safety and efficiency. These Japanese steel “Shun” knives are my top choice. This starter set is an excellent foundation to build upon. Once you experience their precision and balance, you’ll be completely won over, making them a lasting investment in your culinary journey.

My Scanpan 11″ Skillet is a true workhorse in my kitchen, perfectly sized for almost any cooking task. Scanpan is renowned for its proprietary ceramic titanium coating, which is incredibly durable and allows for healthy cooking with minimal fats and oils. It’s a game-changer for searing chicken or sautéing large batches of mushrooms. Other excellent sizes include the 8″ & 10″ Skillet set, the individual 8″ Skillet, and for those who cook big, the 12.5″ is another favorite!

This giant vat of premium Olive Oil is my absolute favorite for everyday cooking. I simply decant it into a chic smaller bottle for easy access on my counter. Alternatively, you can fit this ingenious spigot onto the top of a wine bottle for a convenient pour.

The Tovolo jar scraper has to be my single most cherished and frequently used kitchen tool. If you’re not typically a gadget person, this is the one essential item I would say is an absolute MUST, even beyond a classic wooden spoon. It’s incredibly efficient for getting every last bit out of jars, mixing bowls, and pots.

A great quality wooden spoon is truly essential for stirring, sautéing, and mixing without damaging your cookware. This elegant Olive Wood spoon is my favorite; I have more than I can count, and they’re perfect for gentle stirring of delicate sauces like our saffron cream.
